Echizen Soba No Sato (Echizen, Fukui)

Echizen Soba no Sato is one of the few directly managed soba farms in Japan that grows soba in Echizen City, Fukui Prefecture. The vast farm in Echizen City and Hokkaido handles everything from milling to noodle production and making sauce. In addition to production, visitors can also experience soba noodle making at the Experience Dream Workshop. The soba you make yourself can be eaten as “grated soba,” a specialty of Fukui.

Known as the birthplace of Echizen soba, the Echizen soba noodle factory has been in business for more than 90 years and is directly operated by Takefu Seimen. The company is dedicated to the buckwheat seeds, and mills and prepares the noodles from buckwheat grown on its own farms in Fukui and Hokkaido. You can enjoy the unique grated buckwheat noodles here, for which the entire process, from cultivation to cooking, is handled by the company.

Here you can also taste Fukui’s gourmet food such as sauced pork cutlet served on top of a bowl of rice and grilled mackerel sushi.
