
Ningyo-yaki is a Japanese confectionery made by baking sponge cake dough with red bean paste and other ingredients. It is said to have originated in Nihonbashi Ningyocho, Chuo-ku, Tokyo, and is known as a speciality confectionery of Tokyo. It is said to have originated as a baked sweet made to please customers who came to see a puppet play in Ningyocho. Since they were sold in Ningyocho, they came to be known as ‘Ningyo-yaki’.

Yamadaya (Kinshicho, Tokyo)
The dough is made with our signature egg and filled with the finest koshi-an (sweet red bean paste). He has a sweet tooth himself, and is a craftsman with a stubborn and persistent spirit. The doll-shaped biscuits made by his predecessor were well received by downtown residents, who were fussy about both taste and price, and quickly became a Kinshicho speciality. The taste and passion of the previous generation has been passed on to the second generation.



Genshu-an (Mizue,Tokyo)
Genshu-an is a Japanese confectionery in Edogawa Ward. It offers a wide range of attractive sweets unique to Edogawa Ward, such as sweets made from komatsuna (a speciality of Edogawa Ward) and castella dough Ningyo-yaki made from Hokkaido azuki beans. Ningyo-yaki are filled with refined bean paste made from Hokkaido azuki beans.
